Here’s a classic Coffee Scroll Biscuits recipe — soft, sweet, with that nostalgic spiced flavor and a light coffee icing on top. These are perfect with a cuppa!
☕ Coffee Scroll Biscuits
Prep time: 20 mins
Cook time: 15 mins
Makes: ~24 biscuits
Ingredients
For the biscuits:
125g (1/2 cup) unsalted butter, softened
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 3/4 cups plain flour
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves (optional)
Pinch of salt
For the coffee icing:
1 cup icing sugar
1 tbsp instant coffee granules
1 tbsp hot water (adjust to consistency)
Instructions
Preheat oven to 180°C (350°F). Line a baking tray with baking paper.
Cream butter and sugar until pale and fluffy. Add the egg and vanilla and mix until combined.
Sift dry ingredients (flour, baking soda, spices, and salt) into the butter mixture. Mix until it forms a dough.
Roll into small balls (about 1 tbsp of dough), place on the tray, and flatten slightly with your palm or a fork.
Bake for 12–15 minutes, or until lightly golden. Cool on a wire rack.
Make the icing: dissolve the coffee in hot water, then mix with icing sugar. Adjust with more water or sugar to get a spreadable consistency.
Ice the biscuits once fully cooled. Let the icing set before serving.
Tips:
You can swirl the icing for that classic “scroll” look using a piping bag or the back of a spoon.
Add chopped walnuts or a sprinkle of cinnamon sugar on top if you’re feeling fancy.
