Homemade Crumpets
Ingredients (Makes about 10-12 crumpets):
2 cups (250g) all-purpose flour
1½ tsp instant yeast
1 tsp sugar
½ tsp salt
1¼ cups (300ml) warm milk
½ cup (120ml) warm water
½ tsp baking soda
Butter or oil (for greasing pan/rings)
Instructions:
Make the Batter:
In a large bowl, combine flour, yeast, sugar, and salt.
Add the warm milk and mix until smooth.
Cover and let the batter rise in a warm place for 1 hour, or until it’s bubbly and doubled in size.
Add Baking Soda:
Dissolve the baking soda in warm water, then mix into the batter. It should be like thick pancake batter. Let rest for 10 minutes.
Cook the Crumpets:
Heat a nonstick pan over medium-low heat and lightly grease it. If you have crumpet rings (or metal cookie cutters), grease those too and place in the pan.
Spoon batter into the rings, filling them about halfway.
Cook for 6–8 minutes, until bubbles form and the top looks set.
Remove the rings, flip the crumpets, and cook for another 2–3 minutes to lightly brown the tops.
