Blackstone Roasted Mushrooms and Onions

Ingredients:
2 tablespoons olive oil (or butter)
1 pound mushrooms (baby bella, white button, or a mix), sliced
1 large yellow onion, thinly sliced
3 cloves garlic, minced
1 tablespoon soy sauce (adds umami and depth)
1 teaspoon Worcestershire sauce (optional)
Salt and freshly ground black pepper, to taste
½ teaspoon dried thyme or Italian seasoning (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the Griddle:
Set your Blackstone griddle to medium heat.
Add oil or butter and let it melt and coat the surface.
Cook the Onions:
Add sliced onions to one side of the griddle.
