Here’s a classic homemade Cabbage Burgers recipe (also known as Runzas or Bierocks in some regions). It features seasoned ground beef, sautéed cabbage and onion, all wrapped in soft bread dough—perfect for a hearty meal or freezer-friendly snack.

Cabbage Burgers Recipe

Ingredients:

For the Dough (or use store-bought frozen bread dough, thawed):

1 cup warm milk (110°F/43°C)

1/4 cup sugar

2 1/4 tsp (1 packet) active dry yeast

1/4 cup melted butter

1 tsp salt

1 egg

3 1/2 – 4 cups all-purpose flour

For the Filling:

1 lb (450g) ground beef

1 medium onion, diced

1/2 head of cabbage, shredded (about 4–5 cups)

Salt and pepper to taste

Optional: garlic powder, Worcestershire sauce, paprika

Instructions:

1. Make the Dough:

In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.

Add melted butter, egg, and salt. Mix well.

Gradually add flour, 1 cup at a time, until a soft dough forms.

Knead dough for about 5–7 minutes (or use a stand mixer with dough hook).

Place dough in a greased bowl, cover, and let rise in a warm place until doubled (about 1 hour).

2. Prepare the Filling:

In a large skillet, brown the ground beef with diced onion until no longer pink.

Add shredded cabbage and cook until soft (about 10–15 minutes). Season with salt, pepper, and any optional spices to taste.

Let the filling cool slightly.

3. Assemble the Burgers:

Preheat oven to 375°F (190°C).

Punch down dough and divide into 8–10 equal pieces.

Roll each piece into a circle (about 5–6 inches wide).

Spoon filling into the center of each dough round.

Fold the edges up and pinch to seal into a bun shape. Place seam-side down on a baking sheet lined with parchment.

Optional: brush with egg wash (1 beaten egg + 1 tbsp water) for a golden finish.

4. Bake:

Bake for 20–25 minutes or until golden brown.

Freezing Tip:

Let the cabbage burgers cool completely, then wrap individually and freeze. Reheat in the oven or microwave.
