Cottage Cheese and Spinach – Full Recipe

Ingredients
1 cup (about 200g) cottage cheese (paneer-style or soft)
2 cups fresh spinach, chopped (or 1 cup frozen, thawed & squeezed)
1 tbsp olive oil or butter
1 small onion, finely chopped
2 garlic cloves, minced
1 small green chili, chopped (optional)
¼ tsp cumin seeds (optional)
¼ tsp ground turmeric
¼ tsp black pepper
Salt to taste
1 tbsp cream or milk (optional, for creamier texture)
Lemon juice to taste
Method
1. Prep the spinach
If using fresh spinach, wash, chop, and wilt it in a hot pan for 2–3 minutes. Drain any excess water.
2. Cook the base
Heat oil or butter in a pan over medium heat.
Add cumin seeds (if using) and let them sizzle for a few seconds.
Add chopped onions, sauté until soft and golden.
Stir in garlic and chili, cook for 30 seconds.
3. Add spinach and spices
Add the wilted spinach, turmeric, salt, and pepper. Cook for 2–3 minutes, stirring gently.
4. Add cottage cheese
Stir in the cottage cheese and mix well. Cook for another 2–3 minutes until heated through.
Add a splash of cream or milk if you’d like it richer.
5. Finish
Turn off heat and add a squeeze of lemon juice.
