Bannock Burgers

Here’s a full recipe for Bannock Burgers – juicy burgers served inside soft bannock bread instead of regular buns:

Bannock (Burger Buns)

Ingredients:

4 cups all-purpose flour

2 tbsp baking powder

1 tsp salt

2 tbsp sugar (optional, for a softer bun)

1/4 cup butter or lard (cold, cut into cubes)

1 ½ cups warm water or milk

Instructions:

In a large bowl, whisk together flour, baking powder, salt, and sugar.

Cut in butter/lard until crumbly.

Gradually add water or milk, mixing until a soft dough forms (not sticky).

Turn out onto a floured surface, knead gently 2–3 minutes.

Divide into 6–8 equal pieces, shape into flat rounds (about 1-inch thick).

Heat a lightly oiled skillet, griddle, or cast-iron pan over medium heat.

Cook each bannock for 5–7 minutes per side, until golden brown and cooked through.

(Alternatively, bake at 400°F/200°C for 20–25 minutes).

Let cool slightly, then slice in half like burger buns.

Burger Patties

Ingredients:

2 lbs ground beef (or bison, venison, turkey, or plant-based alternative)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp salt

1 tsp black pepper

1 tsp paprika or chili powder (optional)

1 egg (binder)

1/2 cup breadcrumbs (optional for firmness)

Instructions:

Mix all ingredients in a bowl until just combined (don’t overmix).

Shape into 6–8 patties, slightly larger than your bannock rounds.

Cook on a grill, skillet, or air fryer until cooked through (internal temp 160°F/71°C for beef).

Assembly

Split bannock rounds in half.

Place cooked burger patty inside.

Add cheese, lettuce, tomato, pickles, onions, and your favorite sauces.

Serve warm and enjoy!
