Air Fryer Caprese Chicken with Pesto, Tomato, and Cheese

Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tbsp olive oil (optional)
4 tbsp basil pesto (store-bought or homemade)
1–2 ripe tomatoes, sliced
4 slices fresh mozzarella cheese (or 1 cup shredded mozzarella)
Fresh basil leaves (for garnish)
Balsamic glaze (optional, for drizzling)
Instructions:
1. Prep the Chicken
Pat chicken breasts dry and slice horizontally (if thick) to make cutlets, or pound to even thickness.
Season both sides with salt and pepper. Brush lightly with olive oil (optional for crisping).
2. Air Fry
Preheat air fryer to 375°F (190°C) for 3 minutes.
Place chicken in the air fryer basket in a single layer.
Cook for 10–12 minutes, flipping halfway through, until internal temp reaches 165°F (74°C).
