Ingredients
- 2 cups rice steamed
- 1/2 cup onion diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil extra to drizzle on when serving, if desired
- 1 tablespoon sesame seeds extra for garnish, if desired
- 1 teaspoon ground ginger
- 1 cup chicken cooked and cut into bite-sized pieces
- 2 eggs whisked
- 1 cup mixed frozen vegetables I used peas and carrots
- green onions for garnish, if desired
Instructions

In a large bowl, mix rice, onion, soy sauce, sesame seeds, sesame oil, ginger and chicken.

Place mixture in a dish to fit your air fryer basket. Air Fry at 350 degrees Fahrenheit for 5 minutes.

Remove, stir the rice, and add the whisked eggs to the top. Air Fry for 3 more minutes to cook the eggs.

Remove and fold in vegetables with eggs rice mixture. Air Fry for 5 more minutes.

Let cool and enjoy. Garnish with more sesame seed, chopped green onions and a drizzle of sesame oil if desired.
