Chemo Casserole

Here’s a comforting, easy-to-eat Chemo Casserole recipe designed to be gentle on the stomach and nourishing during chemotherapy. It’s packed with nutrients, easy to digest, and low in strong flavors or spices that can trigger nausea.

Chemo Casserole (Gentle Chicken & Rice Bake)

Ingredients:

2 cups cooked white or brown rice

1 ½ cups shredded cooked chicken (or rotisserie chicken, skin removed)

1 cup steamed broccoli florets (optional, or substitute with zucchini or carrots)

1 can (10.5 oz) cream of chicken or mushroom soup (low sodium)

½ cup plain Greek yogurt or sour cream

½ cup shredded mild cheddar cheese (or mozzarella)

1 tsp olive oil or unsalted butter

Salt & pepper to taste (optional, keep minimal if sensitive)

¼ tsp garlic powder (optional)

Optional Add-ins:

1 tbsp nutritional yeast for added B vitamins

A sprinkle of ground flaxseed or chia seeds for fiber

Use dairy-free cheese/yogurt if lactose-sensitive

‍ Instructions:

Preheat oven to 350°F (175°C).

In a large bowl, mix together the cooked rice, shredded chicken, broccoli, soup, yogurt/sour cream, and seasonings.

Pour into a greased 9×9-inch baking dish.

Sprinkle cheese evenly on top.

Bake for 25–30 minutes, until bubbly and heated through.

Let cool slightly before serving.

Tips for Chemo-Friendly Eating:

Eat it warm, not hot, to avoid mouth sensitivity.

You can freeze portions for easy reheating.

Serve with unsweetened applesauce or a slice of toast if appetite is low.

Stay hydrated — a glass of water with lemon or ginger can help nausea.
