Chocolate Chip Strawberry Jam & Cream Scones
Ingredients:
For the scones:
2 cups (250g) all-purpose flour
1/4 cup (50g) granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup (115g) cold unsalted butter, cubed
2/3 cup (160ml) heavy cream or whole milk
1 large egg
1 tsp vanilla extract
1/2 cup (90g) mini chocolate chips
For serving:
Strawberry jam (your favorite kind)
Whipped cream or clotted cream
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add cold butter and cut it in using a pastry cutter or your fingers until the mix looks like coarse crumbs.
Stir in chocolate chips.
In a small bowl, whisk together cream, egg, and vanilla. Pour into dry mixture and stir gently until just combined. Do not overmix.
Turn dough out onto a lightly floured surface and gently pat into a 1-inch thick round. Cut into 8 wedges or use a round cutter.
Place on prepared baking sheet. For extra golden tops, brush with a little cream or milk.
