Cottage Cheese Chicken Pizza Bowl

High protein cottage cheese pizza bowls made with cottage cheese and your favorite pizza toppings.

PREPARATION TIME:

Prep Time: 5 minutes minutes
Cook Time: 12 minutes minutes

Ingredients:

  • 16 oz cottage cheese
  • 1 cup mozzarella cheese
  • 1/4 cup Parmesan Cheese
  • 3/4 cup marinara sauce
  • 4 oz turkey pepperoni
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1-2 cups pita chips
  • 2 cups mini peppers
  • To make in a casserole dish in the oven

      • Preheat oven to 350. Blend a 16 oz container of cottage cheese using a blender or immersion blender.
      • In a medium sized bowl or in the cottage cheese container, add Parmesan Cheese and seasonings. Mix well.
      • Cover the bottom of the casserole dish with the cottage cheese mixture.

        Instructions:

    • Next, layer tomato sauce and then mozzarella cheese and pepperoni on top of the cottage cheese mixture.
    • Bake in the oven for 12-15 minutes or until the cheese is melted.
    • Top with extra parmesan cheese and serve with pita chips and sliced bell peppers for dipping!

    To make in a single serving bowl

    • Blend 1/2 cup cottage cheese with an immersion blender or countertop blender.
    • Add cottage cheese, 1/4 tsp garlic powder, 1/4 tsp Italian seasoning, 1 tbsp Parmesan Cheese, 1/4 cup mozzarella cheese, 1/4 cup marinara sauce and 1 oz turkey pepperoni to a bowl. You can also add any other pizza toppings you enjoy like chopped peppers, mushrooms or onions.
    • Mix well and microwave for 20-35 seconds. Top with extra parm and serve with pita chips and mini peppers. Enjoy!
    • Notes:

      Because it’s heated, the cottage cheese will not be perfectly smooth. If the cottage cheese texture doesn’t bother you, you can skip the blending!
