Cottage Cheese Dough Bites Recipe

Ingredients:

1 cup cottage cheese (smooth or slightly chunky)

1 large egg

2 tbsp melted butter or oil

2 tbsp sugar (omit or reduce for savory)

1/2 tsp salt

1/2 tsp baking soda

1 tsp baking powder

1 cup all-purpose flour (plus extra as needed)

Optional add-ins (choose sweet or savory):

Sweet: vanilla extract, cinnamon, mini chocolate chips, raisins

Savory: chopped chives, grated cheddar, garlic powder

Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Mix wet ingredients:
In a mixing bowl, combine cottage cheese, egg, melted butter (or oil), and sugar (if using). Stir until smooth.

Add dry ingredients:
Mix in salt, baking soda, baking powder, and flour. Stir until a soft, slightly sticky dough forms. Add a bit more flour if too sticky.

Add extras:
Fold in any optional ingredients (sweet or savory).

Form bites:
Using a spoon or your hands, form small balls or scoop dollops onto the baking sheet (about 1–1.5 inches wide).

Bake:
Bake for 12–15 minutes, or until lightly golden on the outside and cooked through.

Cool and serve:
Let cool slightly. Serve warm or at room temp. Best fresh, but can be stored in an airtight container for up to 3 days.

Tips:

For a fluffier texture, blend the cottage cheese before mixing.

Make mini versions as finger food for kids.

Pair savory bites with soup or salad, or sweet ones with tea or yogurt.
