Easy Gluten-Free Sandwich Bread
Ingredients
Dry
2 ½ cups gluten-free all-purpose flour (with xanthan gum)
2 ¼ tsp (1 packet) instant yeast
1 tsp salt
1 tbsp sugar or honey
Wet
1 cup warm water (about 110°F / 43°C)
2 large eggs, room temperature
3 tbsp olive oil or melted butter
1 tsp apple cider vinegar
Instructions
Activate yeast
In a bowl, mix warm water and sugar. Sprinkle yeast on top. Let sit 5–10 minutes until foamy.
Mix dry ingredients
In a large bowl, whisk together flour and salt.
Combine wet ingredients
Add eggs, oil, vinegar, and yeast mixture to the dry ingredients.
