Here’s a reliable, soft gluten-free bread recipe that works well even if you’re new to gluten-free baking. It’s a simple yeast loaf with good structure and flavor 🍞

Soft Gluten-Free Sandwich Bread

Ingredients

Dry

2 cups (280 g) gluten-free all-purpose flour (with xanthan gum)

1 packet (2¼ tsp) instant yeast

1 tbsp sugar or honey

1 tsp salt

Wet

1¼ cups warm milk or dairy-free milk (about 110°F / 43°C)

2 tbsp olive oil or melted butter

2 large eggs (room temperature)

1 tsp apple cider vinegar

Instructions

Activate yeast
In a bowl, mix warm milk and sugar. Stir in yeast and let sit 5 minutes until foamy.

Mix dough
Add oil, eggs, and vinegar to the yeast mixture. Mix well.

Add dry ingredients
Stir in flour and salt. Beat with a mixer (or vigorously by hand) for 2–3 minutes.
👉 The dough should be thick and sticky—more like cake batter than regular bread dough.

First rise
Transfer dough to a greased loaf pan (8½ × 4½ inch). Smooth the top with wet hands.
Cover loosely and let rise in a warm place for 30–45 minutes, until it rises just above the pan.

Bake
Preheat oven to 375°F (190°C).
Bake for 35–40 minutes, until golden and the internal temp reaches about 200°F (93°C).

Cool completely
Remove from pan and cool on a rack before slicing (important for texture).

Tips for Best Results

Use a gluten-free flour blend meant for yeast bread if possible.

If your blend has no xanthan gum, add 1 tsp.

For extra softness, brush the top with butter right after baking.

Slice once fully cool and store tightly wrapped or freeze slices.
