Soft Gluten-Free Sandwich Bread
Ingredients
Dry
2 cups (280 g) gluten-free all-purpose flour (with xanthan gum)
1 packet (2¼ tsp) instant yeast
1 tbsp sugar or honey
1 tsp salt
Wet
1¼ cups warm milk or dairy-free milk (about 110°F / 43°C)
2 tbsp olive oil or melted butter
2 large eggs (room temperature)
1 tsp apple cider vinegar
Instructions
Activate yeast
In a bowl, mix warm milk and sugar. Stir in yeast and let sit 5 minutes until foamy.
Mix dough
Add oil, eggs, and vinegar to the yeast mixture. Mix well.
Add dry ingredients
Stir in flour and salt. Beat with a mixer (or vigorously by hand) for 2–3 minutes.

First rise
