Gluten-Free Chocolate Chip Cookies
Ingredients
1 ½ cups gluten-free all-purpose flour (with xanthan gum)
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter (softened)
½ cup brown sugar
¼ cup white sugar
1 large egg
1 tsp vanilla extract
1 cup chocolate chips
Optional: 2 tbsp milk (if dough feels dry)
Instructions
1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
2. In a bowl, whisk together gluten-free flour, baking soda, and salt.
3. In another bowl, beat butter + brown sugar + white sugar until creamy.
4. Add egg and vanilla extract; mix well.
5. Add the dry ingredients into the wet mixture. Stir until combined.
6. Fold in the chocolate chips.
7. Scoop tablespoon-sized balls of dough onto the baking tray.
8. Bake 10–12 minutes or until edges are lightly golden.
9. Let cool on the tray for 5 minutes, then move to a rack.
Tips
For chewy cookies, remove from oven slightly soft in the center.
