Ingredients
Chicken
1½ lb chicken (drumsticks, thighs, or boneless strips)
2 tbsp olive oil
Spice Kick Marinade
1 tsp paprika (smoked if possible)
1 tsp chili powder
½–1 tsp cayenne pepper (adjust heat)
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp black pepper
½ tsp cumin
1 tsp gluten-free hot sauce (optional but recommended)
1 tbsp lemon juice or apple cider vinegar
Crispy Coating (Optional but great)
½ cup cornstarch
or gluten-free panko crumbs
Instructions
1. Marinate
Pat chicken dry.
Mix olive oil, spices, hot sauce, and lemon juice.
Coat chicken thoroughly.
Marinate at least 30 minutes (overnight = more kick).
2. Coat
Lightly coat chicken in cornstarch or gluten-free panko for crispiness.
Shake off excess.
3. Cook (Choose One)
Oven-Baked (Healthier)
Preheat oven to 425°F (220°C).
Place chicken on a wire rack over a baking sheet.
Bake 35–45 minutes, flipping halfway, until crispy and 165°F inside.
Air Fryer (Extra Crispy)
Preheat to 400°F (205°C).
Air fry 18–22 minutes, shaking halfway.
Pan-Fried (Classic Kick)
Heat oil over medium-high.
Fry chicken 5–7 minutes per side until golden and cooked through.

Mix:
2 tbsp gluten-free hot sauce
