Gluten-Free Pop Tarts

Here’s a simple, homemade Gluten-Free Pop Tarts recipe you can make from scratch—crispy, flaky, and customizable with your favorite fillings.

Gluten-Free Pop Tarts (Homemade)

Ingredients

For the pastry:

1 ½ cups gluten-free all-purpose flour (with xanthan gum)

1 tbsp sugar

½ tsp salt

½ cup cold unsalted butter (cubed)

1 egg

2–3 tbsp cold milk (or dairy-free milk)

For the filling:

⅓ cup fruit jam (strawberry, raspberry, blueberry, etc.)

For the glaze (optional):

½ cup powdered sugar

1–2 tbsp milk

½ tsp vanilla extract

Instructions

1. Make the dough

In a bowl, mix flour, sugar, and salt.

Cut in cold butter until crumbly (pea-sized pieces).

Add egg and milk gradually until dough comes together.

Shape into a disc, wrap, and chill for 30 minutes.

2. Roll & cut

Roll dough between parchment paper (to prevent sticking).

Cut into rectangles (~3×4 inches). You’ll need pairs.

3. Fill

Place 1–2 tbsp jam in the center of half the rectangles.

Leave a border around the edges.

4. Seal

Place another rectangle on top.

Press edges with a fork to seal.

Poke a few holes on top (for steam).

5. Bake

Preheat oven to 350°F (175°C).

Bake for 20–25 minutes until lightly golden.

6. Glaze (optional)

Mix powdered sugar, milk, and vanilla.

Spread over cooled pop tarts.

Flavor Ideas

Strawberry + vanilla glaze

Brown sugar cinnamon

Chocolate hazelnut

Apple cinnamon (with cooked apple filling)

Tips

Chill dough well—it helps prevent cracking (common with gluten-free dough).

If dough breaks, patch it gently with fingers.

Use parchment paper when rolling—it makes life much easier.
