Here’s a classic Guinness Brown Bread recipe — rich, hearty, and perfect with butter or alongside soup. It’s easy to make and uses no yeast, relying on baking soda for leavening.
Guinness Brown Bread Recipe
Ingredients
2 ¼ cups (280g) whole wheat flour
1 cup (120g) all-purpose flour
1 tsp baking soda
1 tsp salt
2–3 tbsp brown sugar or molasses (to taste)
2 tbsp rolled oats (optional, for topping)
12 oz (355 ml) Guinness stout (about 1 bottle)
¼ cup (60 ml) buttermilk (or plain yogurt thinned with milk)
2 tbsp melted butter (optional, adds richness)
Instructions
Preheat oven to 375°F (190°C). Grease a standard loaf pan or line with parchment.
Mix dry ingredients in a large bowl:
Whole wheat flour
All-purpose flour
Baking soda
Salt
Sugar or molasses (mix in well if using sugar)
Add wet ingredients:
Pour in the Guinness and buttermilk.
Add melted butter if using.
Mix just until combined — do not overmix.
Pour batter into the prepared loaf pan.
Sprinkle with oats for a rustic look, if desired.
Bake for about 45–55 minutes.
A skewer inserted into the center should come out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack.
Tips
For a deeper flavor, use blackstrap molasses.
For a softer crust, wrap the warm loaf in a clean tea towel after baking.
Let the bread cool completely before slicing — it firms up as it cools.
