- 1-2 tbsp maple or sugar-free syrup
- 1 tsp vanilla extract
- 1/2 banana (optional, omit for low-carb version)
- 1-2 tbsp milk (regular or plant-based, to thin if needed)
- Topping:
- 2 tbsp crushed wafers (check the notes for dietary alternatives)
- 1/4 cup whipped topping (remove for low-carb)
- Banana slices (optional, omit for low-carb)
- Instructions:
- Blend the Ingredients: Add the cottage cheese to a high-speed blender and blend until smooth. Once the cottage cheese is creamy, add the vanilla protein powder, banana pudding mix, syrup, and vanilla extract. Blend again until the mixture is smooth. If the consistency is too thick, gradually add a tablespoon of milk at a time until you reach your desired texture.
- Layer the Pudding Cups: In two glasses, layer the crushed wafers at the bottom. Then, add a spoonful of whipped topping, followed by the banana pudding mixture. Repeat the layers until you have used all of the pudding. Finish with whipped topping, more crushed wafers, and a banana slice on top.
