2 lbs (900g) lamb shoulder or neck, cut into chunks (or use beef if preferred)
6 large potatoes, peeled and sliced (keep 2 aside for thickening)
3 carrots, peeled and sliced
2 onions, sliced
2 parsnips (optional), peeled and sliced
4 cups (1 liter) beef or lamb stock
2 tablespoons fresh parsley, chopped (plus more for garnish)
1 tablespoon fresh thyme (or 1 tsp dried)

Instructions:
