Natural Strawberry Dalky with Thermomix
Ingredients:
For the strawberry cream:
400 g fresh strawberries (hulled)
80–100 g sugar (adjust to taste)
250 g whole milk
200 g heavy cream (minimum 35% fat)
1 tsp vanilla extract
30 g cornstarch
For the topping:
200 g heavy cream (cold)
1–2 tbsp powdered sugar (optional)
Fresh strawberries or mint for garnish (optional)
Instructions:
1. Prepare the Strawberry Base
Place strawberries and sugar in the mixing bowl.
▸ Blend: 10 sec / speed 6
Scrape down the sides.
Add milk, cream, vanilla, and cornstarch.
▸ Cook: 10 min / 90°C / speed 3
▸ Blend again: 10 sec / speed 6 for a smooth texture.
2. Chill the Cream
Pour the mixture into serving cups or jars.
Let cool to room temperature, then refrigerate for at least 2 hours or until set.
3. Make Whipped Cream Topping
Insert the butterfly whisk.
Add cold heavy cream (and powdered sugar if using).
▸ Whip: speed 3.5 (time varies – approx. 1–2 min).
Watch closely to avoid over-whipping.
4. Assemble
Spoon or pipe whipped cream on top of the chilled strawberry cream.
Garnish with fresh strawberries or mint if desired.
Tips:
Use ripe, sweet strawberries for the best flavor.
For a firmer texture (more like a pudding), increase cornstarch to 35 g.
