Grandma’s Old-Fashioned Peanut Brittle

A simple, stovetop candy made with just six pantry ingredients and roasted peanuts.

Ingredients

2 cups sugar

1 cup light corn syrup

½ cup water

2 cups salted roasted peanuts

2 tablespoons butter

1½ teaspoons baking soda

1½ teaspoons vanilla extract

Instructions

Prepare Your Pan:
Line a sheet pan with parchment paper and set aside.

Pre-Measure Ingredients:
Measure out the peanuts, butter, baking soda, and vanilla so they’re ready to add quickly.

Start the Syrup:
In a medium saucepan, combine sugar and water. Stir in corn syrup. Cook over medium heat, stirring occasionally, until it begins a gentle boil.

Use a Candy Thermometer:
Attach a candy thermometer to the pan, ensuring it does not touch the bottom. Cook, stirring occasionally, until the mixture reaches 250°F (121°C).

Add Peanuts:
Stir in the peanuts and continue stirring constantly until the mixture reaches 300°F (149°C).

Final Add-Ins:
Remove from heat and immediately stir in the butter, baking soda, and vanilla. The mixture will foam up and change texture.

Spread & Cool:
Quickly pour the mixture onto the prepared pan and spread it into an even layer. Let it cool completely (at least 30 minutes).

Break & Store:
Once cooled, break the brittle into pieces. Store in an airtight container.

Storage Tips

Make Ahead: Can be made several days or weeks in advance.

Room Temperature: Store in an airtight container for 6–8 weeks. Do not refrigerate.

Freezer: Store in a freezer-safe container for up to 3 months.
