Here’s a full recipe for Strawberry and Lemon Ice Cream, combining the fresh, sweet taste of strawberries with a zesty lemon twist. This recipe uses an ice cream maker, but you can also adapt it for no-churn if needed.

Strawberry and Lemon Ice Cream Recipe

Prep Time: 25 mins

Chill Time: 4+ hours (or overnight)

Makes about 1 quart (1 liter)

Ingredients

For the Ice Cream Base:

1 cup (240 ml) whole milk

2 cups (480 ml) heavy cream

3/4 cup (150 g) granulated sugar

1 tbsp lemon zest (from 1–2 lemons)

1/4 cup (60 ml) fresh lemon juice (strained)

1 tsp pure vanilla extract

Pinch of salt

For the Strawberry Swirl:

1 ½ cups (225 g) fresh strawberries, hulled and chopped

2 tbsp lemon juice

2 tbsp granulated sugar

Instructions

1. Make the Strawberry Swirl

In a small saucepan over medium heat, combine chopped strawberries, lemon juice, and sugar.

Cook for 8–10 minutes, stirring occasionally, until the strawberries break down and the mixture thickens slightly.

Remove from heat, cool, then blend (optional) for a smoother texture. Chill in the fridge until cold.

2. Prepare the Ice Cream Base

In a mixing bowl, whisk together the milk and sugar until the sugar is fully dissolved (about 2–3 minutes).

Add heavy cream, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Whisk until fully combined.

Cover and refrigerate the mixture for at least 2 hours (or overnight for best flavor).

3. Churn the Ice Cream

Pour the chilled base into your ice cream maker and churn according to the manufacturer’s instructions (usually about 20–25 minutes).

Once the mixture reaches a soft-serve consistency, stop the machine.

4. Add the Strawberry Swirl

Transfer half of the churned ice cream into a freezer-safe container.

Spoon half the strawberry sauce over it and swirl gently with a knife or skewer.

Repeat with the remaining ice cream and sauce.

Smooth the top and cover.

5. Freeze

Freeze the container for at least 4 hours, or until firm.

Serving Suggestions

Garnish with fresh strawberry slices or lemon zest curls.

Serve in cones, bowls, or even between cookies for an ice cream sandwich.
