Thermomix Vanilla Ice Cream Recipe
Ingredients:
600 ml thickened cream (or heavy cream)
250 ml full cream milk
150 g caster sugar
2 tsp vanilla extract (or 1 vanilla bean, scraped)
4 egg yolks
Instructions:
Make the custard base:
Add milk, cream, sugar, vanilla, and egg yolks into the Thermomix bowl.
Cook for 8 min / 90°C / speed 4.
Cool it down:
Transfer the custard to a bowl and let it cool completely.
Cover and refrigerate for at least 4 hours or overnight for best flavor.
Churn the ice cream:
Once chilled, pour the custard back into the Thermomix bowl.
Blend for 20 sec / speed 4, just to smooth it out.
Freeze and whip (if you don’t have an ice cream maker):
Pour into a shallow, freezer-safe container and freeze until firm (about 5–6 hours).
Once frozen, cut into chunks and re-blend in Thermomix for 30–40 sec / speed 6 to make it creamy again.
Freeze for another hour or so until scoopable.
