Here’s a full recipe for making crispy zucchini chips — either baked or air-fried, depending on your preference. They make a great healthy snack!

Crispy Zucchini Chips Recipe

Ingredients:

2 medium zucchinis

1 tablespoon olive oil (or use cooking spray)

1/3 cup grated Parmesan cheese (optional for flavor and extra crispiness)

1/3 cup breadcrumbs or panko (for crunch – optional)

1/2 teaspoon garlic powder

1/2 teaspoon paprika (or smoked paprika)

Salt & black pepper to taste

Optional Add-ons:

Chili flakes for heat

Italian seasoning for extra flavor

Instructions:

1. Prep the Zucchini

Wash and dry the zucchinis.

Slice into very thin rounds — about 1/8 inch thick (use a mandoline slicer for even thickness).

2. Remove Moisture (Important!)

Lay slices on a paper towel-lined tray.

Sprinkle lightly with salt.

Let sit for 15–20 minutes to draw out moisture.

Pat dry with paper towels.

3. Preheat Oven or Air Fryer

Oven: Preheat to 225°F (110°C) — low temp helps dehydrate them.

Air Fryer: Preheat to 350°F (175°C).

4. Season

Toss zucchini slices in olive oil.

Mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper in a bowl.

Dredge each zucchini slice in the mixture (optional: press lightly so coating sticks).

5A. Bake Method (Crispier but slower)

Line a baking sheet with parchment paper.

Arrange slices in a single layer, not overlapping.

Bake for 1.5 to 2 hours, flipping halfway.

Keep oven slightly ajar or use convection setting to help drying.

Remove when golden and crisp.

5B. Air Fryer Method (Faster)

Spray air fryer basket lightly with oil.

Lay slices in a single layer (you may need to do batches).

Air fry at 350°F (175°C) for 8–12 minutes, flipping halfway.

Watch closely near the end to avoid burning.

Storage:

Let chips cool completely.

Store in an airtight container for up to 2–3 days.

If they soften, you can re-crisp in the oven or air fryer.

Tips for Maximum Crisp:

The thinner the slices, the crispier the chips.

Removing moisture is crucial — don’t skip salting and drying.

Parmesan helps with crispiness if you’re not keeping it dairy-free.
