This rustic Cajun chicken and wild rice casserole is an easy to make hearty family favorite meal with tons of flavor and textures. It’s sure to be a hit with family and friends!

Ingredients
1 package long grain and wild rice, prepared
1 medium onion, chopped
1 tablespoon oil
1 10.5-ounce can cream of celery soup
3 cups cooked chicken, cubed
2 8-ounce cans French style green beans, drained
1 6.5-ounce jar pimentos, diced
1 3.8-ounce can sliced black olives, drained
1 cup fresh mushrooms, cleaned and sliced
1 cup mayonnaise
1 8-ounce can sliced water chestnuts
1 6-ounce can French fried onions (optional)
Salt and pepper to taste
Directions
Prepare rice as directed on packaging, set aside.
Preheat oven to 350° F.
In a large pot, cook onions in oil on medium heat until tender and translucent. Remove from heat.
Add all remaining ingredients except canned fried onions to the pot. Using a spoon, stir until all ingredients are well mixed.
Pour into a 3-quart casserole dish lightly coated with cooking spray.
Top casserole with a can of fried onions.
Bake for 30 minutes or until bubbly.
