Here’s a simple and delicious recipe for Cookie Butter Protein Ice Cream that you can make at home. It’s creamy, flavorful, and packed with protein—perfect for a healthier dessert or snack!

Ingredients:

1 cup Greek yogurt (unsweetened, full-fat or low-fat depending on your preference)

1/2 cup Cookie Butter (like Biscoff or your favorite brand)

1 scoop Vanilla or Cinnamon Protein Powder

1/2 cup unsweetened almond milk (or any milk of your choice)

1 tablespoon honey or maple syrup (optional, depending on your sweetness preference)

1 teaspoon vanilla extract

Pinch of salt

1/4 cup crushed cookies or graham crackers (optional, for texture)

Instructions:

Blend the Base:
In a blender or food processor, combine the Greek yogurt, cookie butter, protein powder, almond milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and well combined.

Adjust Consistency:
If the mixture is too thick, add a little more almond milk to reach your desired consistency. If it’s too thin, add a little more protein powder or Greek yogurt.

Add Texture (Optional):
If you want a bit of crunch, fold in the crushed cookies or graham crackers. This step adds some fun texture and extra flavor to the ice cream.

Freeze:
Pour the mixture into an airtight container and spread it evenly. Cover and place it in the freezer for at least 4 hours or until fully frozen. If you prefer a softer, more scoopable texture, you can let it sit at room temperature for a few minutes before serving.

Serve:
Once frozen, scoop the ice cream into bowls or cones. You can drizzle a little more cookie butter on top or sprinkle some crushed cookies for extra flavor.

Tips:

You can use a low-sugar cookie butter for a healthier version, or make your own using a blend of ground cookies and a small amount of butter.

If you prefer no added sugar, leave out the honey or maple syrup.

For a richer taste, add a few tablespoons of coconut milk or full-fat cream instead of almond milk.
