Here’s a simple and delicious Tomato Soup recipe you can whip up at home:

Classic Tomato Soup Recipe

Ingredients:

2 tbsp olive oil or butter

1 medium onion, chopped

2 garlic cloves, minced

1 tbsp tomato paste (optional, for depth of flavor)

1 can (28 oz) whole peeled tomatoes or 6–7 fresh ripe tomatoes, chopped

2 cups vegetable broth or chicken broth

1 tsp sugar (optional, to balance acidity)

Salt and pepper to taste

1/4 tsp dried basil or oregano (optional)

1/4 cup heavy cream or milk (optional, for creaminess)

Fresh basil leaves or croutons for garnish (optional)

Instructions:

Sauté Aromatics:
Heat olive oil or butter in a pot over medium heat. Add chopped onion and cook until soft (about 5–7 minutes). Add garlic and cook for another 1 minute.

Add Tomatoes:
Stir in tomato paste (if using), then add the tomatoes with their juices. Break up whole tomatoes with a spoon. Add broth and bring to a simmer.

Simmer:
Simmer uncovered for 20–25 minutes, stirring occasionally. This helps the flavors come together.

Blend:
Use an immersion blender to puree the soup until smooth (or carefully transfer to a blender in batches).

Finish:
Return the soup to the pot (if using a blender). Stir in cream or milk if desired. Season with salt, pepper, sugar, and herbs to taste.

Serve:
Ladle into bowls and garnish with fresh basil or croutons.
