Ingredients:
- 12 ounces cream cheese, softened
- 1/4 cup unsalted butter, melted
- 1/4 cup olive oil
- 1/4 cup heavy cream
- 4 large eggs
- 1 2/3 cups unflavored whey protein powder
- 1/3 teaspoon baking soda
- 2 1/2 teaspoons baking powder
- 1 teaspoon xanthan gum
- 1/2 teaspoon kosher salt
Instructions:
- Preheat your oven to 325°F (165°C). Grease a 9-inch bread pan with cooking spray or line it with parchment paper.
- In a large bowl, combine the softened cream cheese, melted butter, olive oil, heavy cream, and eggs. Use a stick blender or whisk to blend until smooth.
- In a separate bowl, mix together the whey protein powder, baking soda, baking powder, xanthan gum, and kosher salt.
- Gradually add the wet mixture to the dry ingredients. Stir gently by hand until just combined; avoid overmixing.
- Pour the batter into the prepared bread pan. Smooth the top with a spatula.
- Bake for 45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
- Allow the bread to cool completely before slicing. Enjoy fresh, or store slices in an airtight container or freezer for later use.
