Ingredients:

  • 12 ounces cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 1/4 cup olive oil
  • 1/4 cup heavy cream
  • 4 large eggs
  • 1 2/3 cups unflavored whey protein powder
  • 1/3 teaspoon baking soda
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon kosher salt

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch bread pan with cooking spray or line it with parchment paper.
  2. In a large bowl, combine the softened cream cheese, melted butter, olive oil, heavy cream, and eggs. Use a stick blender or whisk to blend until smooth.
  3. In a separate bowl, mix together the whey protein powder, baking soda, baking powder, xanthan gum, and kosher salt.
  4. Gradually add the wet mixture to the dry ingredients. Stir gently by hand until just combined; avoid overmixing.
  5. Pour the batter into the prepared bread pan. Smooth the top with a spatula.
  6. Bake for 45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
  7. Allow the bread to cool completely before slicing. Enjoy fresh, or store slices in an airtight container or freezer for later use.
