Here’s a delicious recipe for chocolate wafer cookies that you can make at home!
Ingredients:
For the Wafer Cookies:
1 1/2 cups all-purpose flour
1/2 cup cocoa powder (unsweetened)
1/2 cup powdered sugar
1/4 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
3 tbsp milk (you might need a bit more depending on dough consistency)
For the Chocolate Filling:
1 cup powdered sugar
1/2 cup unsalted butter, softened
2 tbsp cocoa powder (unsweetened)
1 tsp vanilla extract
2-3 tbsp milk (adjust for desired consistency)
Instructions:
1. Make the Wafer Cookies:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, sift together the flour, cocoa powder, powdered sugar, baking soda, and salt.
In a separate bowl, beat the butter until creamy.
Add the egg and vanilla extract to the butter and continue beating until well combined.
Gradually add the dry ingredients into the wet ingredients and mix until just combined. Add the milk a little at a time until the dough comes together (it should be firm but not too sticky).
Roll the dough out between two sheets of parchment paper to about 1/8-inch thickness.
Use a cookie cutter or a knife to cut the dough into squares (or any shape you prefer).
Place the cookies on the prepared baking sheets and bake for 8-10 minutes or until the edges are slightly firm. Let them cool completely on a wire rack.
2. Prepare the Chocolate Filling:
In a medium bowl, beat the butter until soft and smooth.
Add the cocoa powder and powdered sugar and mix until combined.
Add the vanilla extract and milk, one tablespoon at a time, until the filling reaches your desired consistency (smooth but thick enough to hold its shape).
3. Assemble the Cookies:
Once the cookies are completely cooled, spread a layer of the chocolate filling on the bottom side of one cookie.
Place another cookie on top to form a sandwich.
Repeat this process until all cookies are assembled.
4. Optional Step:
You can dip the edges of the sandwich cookies in melted chocolate for an extra touch of indulgence!
Let the chocolate wafer cookies set for a little while to allow the filling to firm up, and enjoy!
