Ingredients

For the Gluten-Free Chocolate Cake

1 cup gluten-free all-purpose flour blend

½ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

½ tsp salt

¾ cup sugar

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

¾ cup milk (or almond milk)

½ cup hot coffee or hot water (enhances chocolate flavor)

For the Cherry Filling

2 cups pitted cherries (fresh or canned)

¼ cup sugar

1 tbsp cornstarch

2 tbsp water

1 tsp lemon juice

For the Whipped Cream Frosting

2 cups heavy whipping cream

¼ cup powdered sugar

1 tsp vanilla extract

For Decoration

Chocolate shavings or curls

Whole cherries

Instructions

1. Bake the Cake

Preheat oven to 180 °C (350 °F).

Grease and line two 8-inch round cake pans.

In a bowl, whisk together gluten-free flour, cocoa powder, baking powder, baking soda, and salt.

In another bowl, beat eggs and sugar until slightly fluffy.

Add oil, vanilla, and milk; mix well.

Gradually add the dry ingredients.

Stir in hot coffee/water until smooth.

Divide batter between pans and bake 25–30 minutes.

Let cakes cool completely.

2. Make the Cherry Filling

In a saucepan combine cherries and sugar.

Mix cornstarch with water, then add to pan.

Cook on medium heat until thick and glossy.

Stir in lemon juice and cool completely.

3. Prepare Whipped Cream

Beat cold heavy cream until soft peaks form.

Add powdered sugar and vanilla.

Beat until stiff peaks.

4. Assemble the Cake

Place one cake layer on a plate.

Spread whipped cream, then cherry filling.

Add second cake layer.

Frost the entire cake with whipped cream.

Decorate with chocolate shavings and cherries.

Tips

Chill the cake 1–2 hours before serving for best texture.

For authentic flavor, brush layers with cherry syrup or kirsch (optional).

Always check that your cocoa powder and baking powder are certified gluten-free.
