Protein Cabbage and Ground Beef Soup

High-Protein Cabbage & Ground Beef Soup

A hearty, protein-rich soup that’s great for meal prep and comes together in about 45 minutes. Similar versions typically combine lean ground beef, cabbage, tomatoes, and broth for a filling, high-protein meal. (TfRecipes)

Ingredients (6 servings)

1 lb (450 g) lean ground beef (90–95% lean)

1 small head cabbage, chopped (about 6 cups)

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14–15 oz) diced tomatoes

6 cups low-sodium beef broth

1 tbsp tomato paste

1 tsp Italian seasoning

½ tsp paprika

Salt and black pepper to taste

Optional protein boost

1 can kidney beans, drained and rinsed (+7–8 g protein per serving batch) (TfRecipes)

Instructions

In a large pot, brown the ground beef over medium-high heat. Drain excess fat if needed.

Add onion, carrots, and celery. Cook 4–5 minutes until softened.

Stir in garlic and tomato paste; cook 1 minute.

Add diced tomatoes, broth, cabbage, and seasonings.

Bring to a boil, then reduce heat and simmer for 25–30 minutes, until the cabbage is tender.

Taste and adjust seasoning.

Serve hot.

Fat: 10–12 g

Extra-High Protein Version

For about 35–40 g protein per serving:

Use 1.5 lb (680 g) lean ground beef.

Add 1 can kidney beans.

Stir in 1 cup low-fat cottage cheese just before serving (it melts into the broth and adds creaminess).

This soup freezes well for up to 3 months and often tastes even better the next day.
