Christmas Soup Recipe
(Serves 6-8)
Ingredients:
1 lb Italian sausage (mild or spicy)
4 cups potatoes, diced (Yukon Gold or Russet)
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups heavy cream (or whole milk for a lighter version)
2 cups kale or spinach, chopped
1 can (14 oz) diced tomatoes (optional, for a red touch)
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional)
Salt & pepper to taste
2 tbsp olive oil or butter
1/2 cup grated Parmesan cheese (for serving)
Crusty bread for dipping
Instructions:
Cook the sausage: In a large pot, heat olive oil over medium heat. Add sausage and cook until browned. Remove and set aside.
Sauté the aromatics: In the same pot, add onions and cook until soft. Add garlic and cook for another minute.
Add potatoes & broth: Pour in the chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
Blend (optional): If you prefer a creamier soup, blend half of the soup using an immersion blender before proceeding.
Add sausage & greens: Return the sausage to the pot. Stir in kale or spinach, tomatoes (if using), oregano, and red pepper flakes.
Finish with cream: Pour in the heavy cream and let the soup simmer for another 5 minutes. Adjust salt & pepper to taste.
