Rhubarb Margarita – Full Recipe
Rhubarb Syrup (Make Ahead)
Ingredients:
1 cup chopped rhubarb (fresh or frozen)
½ cup sugar
½ cup water
Instructions:
Combine rhubarb, sugar, and water in a small saucepan.
Bring to a boil, then reduce heat and simmer for 10–15 minutes until rhubarb is soft.
Strain through a fine sieve or cheesecloth. Let syrup cool. Store in the fridge (good for up to 1 week).
Margarita
Ingredients (per serving):
2 oz tequila (blanco or reposado)
1 oz rhubarb syrup (from above)
1 oz freshly squeezed lime juice
½ oz triple sec or Cointreau
Ice
Salt or sugar (for rimming glass, optional)
Lime wedge or rhubarb ribbon for garnish
Instructions:
Optional: Rim a glass with lime juice and dip into salt or sugar. Set aside.
In a shaker, combine tequila, rhubarb syrup, lime juice, and triple sec with ice.
Shake well for about 15 seconds.
Strain into a glass filled with fresh ice.
Garnish and serve immediately.
