Ingredients

For the crust (optional):

1 cup graham cracker crumbs or crushed digestive biscuits

3 tbsp melted butter

1 tbsp sugar

For the filling:

2 cups cottage cheese (blended smooth)

3 large eggs

1/2 cup sugar (adjust to taste)

1/4 cup sour cream or plain Greek yogurt

1 tbsp cornstarch or flour

1 tsp vanilla extract

Zest of 1 lemon (optional, for brightness)

Pinch of salt

Instructions

Preheat oven to 325°F (160°C).
Grease a 9-inch springform pan or line it with parchment paper.

Optional crust:
Mix crumbs, butter, and sugar. Press into the bottom of the pan. Bake for 8 minutes, then cool.

Prepare filling:
In a blender or food processor, puree cottage cheese until smooth.
Add eggs, sugar, sour cream, cornstarch, vanilla, lemon zest, and salt. Blend until creamy.

Assemble and bake:
Pour filling over the crust (or directly into pan if crustless).
Bake for 50–60 minutes, until the center is set but slightly jiggly.

Cool:
Let the cake cool completely at room temp, then chill in the fridge for at least 4 hours (overnight is best).

Serve:
