Italian Lasagna

With winter upon us, what better time to whip up a delicious vegan lasagna that friends and family can drool over. This recipe comes lovingly from our friends at v2Food.

PREPARATION TIME

PREP TIME 30 minutes 
COOK TIME 50 minutes

INGREDIENTS

4 butter (vegan butter of your choice)

1/2 cup plain flour

1 litre milk (plant based milk of your choice)

1 quantity Bolognese sauce see recipe below

1 pack lasagna pasta sheets

250 g grated vegan cheese

125 g grated vegan parmesan

The Sauce

500 g V2 mince

olive oil

2 carrots, peeled and finely diced

3 celery stalks washed and finely diced

1 large onion, finely diced

500 ml vegetable stock

2 tbsp paprika

1 tbsp dried mixed herbs

1 tbsp ground cloves

1 tsp ground cinnamon

salt and pepper

1 tin of diced tomatoes

INSTRUCTIONS

Preheat oven to 160 degrees fan-forced (180 regular conventional )
To make the bechamel sauce melt butter in a medium saucepan over medium-high heat until foaming
Add flour
Slowly add milk, whisking constantly, until the mixture is smooth
Return to heat. Cook, stirring with a wooden spoon, for 10 to 12 minutes or until sauce comes to a boil, thickens and coats the back of a wooden spoon
Remove from heat. Stir in half the cheese and salt
In a large, deep baking dish, layer v2 Bolognese sauce (see below) and pasta sheets at least 3 times leaving pasta on top
Sprinkle the remaining cheese over the pasta and pour over the bechamel. Bake for 40 minutes or until bubbling brown and golden on top

The Sauce

Heat a large frypan on medium-high heat and add a splash of olive oil. Add the carrot, celery, onion and garlic and fry off until softened. Add v2mince and cook until browned and crumbling, using a wooden spoon to break it down
Add stock and continue to stir gently. Add paprika, dried herbs, cloves and cinnamon and season with salt and pepper to taste. Pour in a tin of diced tomatoes and reduce heat to low and simmer for 10 minutes.
20 Minutes will be the total cook time.
