Thermomix Vanilla Pudding Pretzels
Dough Ingredients
220 g milk
20 g sugar
40 g fresh yeast (or 2 tsp dry yeast)
500 g plain flour
1 pinch salt
2 eggs
150 g cold butter, sliced thinly
Vanilla Pudding Filling
650 g milk
150 g cream
75 g sugar
1½ packets vanilla pudding powder (about 55–60 g)
1 tsp vanilla extract or vanilla sugar
Pinch of salt
Glaze
60 g icing sugar
15 g water or lemon juice
Thermomix Instructions
1. Make the Vanilla Pudding
Add milk, cream, sugar, pudding powder, vanilla, and salt to the Thermomix bowl.
Cook:
7 min / 90°C / speed 4
Transfer to a bowl, cover surface with cling film, and cool completely.
2. Prepare the Dough
Add milk, sugar, and yeast:
2 min / 37°C / speed 2
Add flour, salt, and eggs:
3 min / dough mode
Chill dough for 20 minutes.
3. Laminate with Butter
Roll dough into a rectangle.
Place thin butter slices over two-thirds of the dough.
Fold like a letter.
Chill 15 minutes.
Repeat rolling and folding 2 more times.
4. Shape the Pretzels
Roll dough into a rectangle about ½ cm thick.
Cut into strips and twist into pretzel shapes.
Place on lined trays.
Spoon cooled vanilla pudding into the center openings.
5. Proof & Bake
Let rise 30–40 minutes.
Bake at:
180°C fan / 200°C conventional
for 15–20 minutes until golden.
6. Glaze
Mix icing sugar with water and drizzle over cooled pastries.
These are best eaten slightly warm with coffee or tea.
