Thermomix Butter

If you’re asking how to make butter in a Thermomix, it’s actually very straightforward—you basically over-whip cream until it separates into butterfat and buttermilk.

Using a Thermomix TM6 (or TM5 / TM31), here’s a reliable method:

Ingredients:

500 g cold whipping cream (at least 35% fat)

Pinch of salt (optional)

Steps:

Insert butterfly whisk (optional but helps)
Not required, but it can speed up the whipping stage.

Whip the cream

Speed: 3.5–4

Time: ~2–4 minutes

Watch closely: it will go from whipped cream → grainy → suddenly split.

Butter separates
Once you see yellow clumps (butter) and liquid (buttermilk), stop the machine.

Strain
Pour mixture through the simmering basket or a fine sieve to separate butter from buttermilk.

Wash the butter (important step)
Put butter back in the bowl:

Add cold water

Mix 10–15 sec / speed 4

Drain
Repeat 2–3 times until water runs clear (this makes it last longer).

Add salt (optional)
Mix 5–10 sec / speed 3 if you want salted butter.

Shape and store
Form into a block or roll and refrigerate.

Tip

The fresher and higher-fat the cream, the better the yield.

The leftover buttermilk is great for pancakes, baking, or smoothies.
